Fish Pie

6 boiled eggs, cut into quarters
2 lbs. white fish
1 cup cream
4 tbls. dijon mustard
2 tbls. lemon juice
1/2 cup parmesan or cheddar
1 lb. spinach
3 large carrots
1 cup peas
6 large golden potatoes, boiled and mashed
In a large casserole dish, spread fish out. Combine 1/2 cup cream, mustard, and lemon juice. Pour over fish. Bake in oven at 350 till fish is done, usually around 45 minutes. Take out when done. Pour juice into bowl. Mix rest of cream and the cheese into bowl. Tear apart the cooked fish with a fork, but leave in baking dish.
Cook spinach and carrots in a skillet. Put on top of fish. Place eggs on fish. Pour cream over veggies and eggs. Spoon mashed potatoes over cream. Bake in oven at 350 for about an hour, till top is slightly brown.
We flew British Airlines in 2007 to Europe and Africa, they served us an awesome fish pie. So when I came home, I’ve come up with my own versions.
